Apple Cider Vinegar (ACV) Racking Time…

Like most creative things I do I wait for the right time to put my heart and soul into it. Sometimes I have projects laying around for days, weeks or even months before I pick them up again and finish them off.
The apple cider vinegar making has been sidelined for thirteen years! Yes, you read right, it has been a tad over 13 years since I juiced the organic apples, filled the glass demijohns and placed the airlock on top (this must be a record for me, the longest project running). The results are magnificent, take a look below…

I racked the tart-smelling liquid into clean glass bottles and the ACV is crystal clear. I even managed to save some mother for next batch.
When I juiced the apples back in July 2012, I had no idea that I would wait until I was settled into our beautiful property in the hills of Mt Perry, one hot day in spring 2025 to finally bottle it. Alas Christmas is on its way and I will use it in many dishes over the coming months.
I have about 20 L left to rack, but no more empty bottles. I may just shout myself a dozen new swing-top lidded bottles and empty out those demijohns to make way for some small batch wine next! I’m hoping my son’s grape vine are muscatel
